"Honey Water" is a transparent clear liquid that develops in apples that are truly ripe when they are harvested. Considered a gourmet delicacy in Japan, we rarely see it in America. Fuji apples from the teaching orchard at Wenatchee Valley College, hand pampered and grown to perfect ripeness and unbelievable size and sweetness (up to 6 inches across!) are now available in gift boxes for the holidays. Definitely not your run-of-the-mill store bought apples! And, you are helping to support the efforts of the students - tomorrow's progressive fruit growers.

Apple Selection Tips
How do you know if you are getting a good apple? Which varieties are best for fresh eating? for baking? Go to the apple Selection Tips page for help on which apples to buy, when to buy them and where.
Which Varieties Are Best?
The best variety is the one you like the best. Almost any variety can be used for almost any application. For example, many people would never think of baking a pie with a McIntosh, while others won't use anything else.

New Varieties
Many growers are planting new disease-resistant varieties in an effort to reduce losses from disease and pests. Pristine, Redfree and William's Pride in particular are excellent apples.

After Apple Picking
My long two-pointed ladder's sticking through a tree
Toward heaven still.
And there's a barrel that I didn't fill
Beside it, and there may be two or three
Apples I didn't pick upon some bough.
But I am done with apple-picking now.
Essence of winter sleep is on the night,
The scent of apples; I am drowsing off.
I cannot shake the shimmer from my sight
I got from looking through a pane of glass
I skimmed this morning from the water-trough,
And held against the world of hoary grass.
It melted, and I let it fall and break.
But I was well
Upon my way to sleep before it fell,
And I could tell
What form my dreaming was about to take.
Magnified apples appear and reappear,
Stem end and blossom end,
And every fleck of russet showing clear.
